Made from cow’s milk<\/strong>, this local specialty is called “salty cheese”<\/em> not because of the presence of rock salt, but because of its processing. Once cooked, in fact, it is immersed in larch vats containing Salm\u00f4re<\/em>, a solution of water, rising cream and milk.<\/strong> <\/p>\n

Do you want to know a secret? The brine improves in quality over the years, and ours is almost a hundred years old<\/strong>! <\/p>\n
